My go-to low carb breakfast: Chia Seed Pudding
I discovered chia seed pudding when I became completely tired of eggs and couldn’t find any high protein/low carb breakfast meals! I honestly ate chicken for breakfast for a while before beginning to make this recipe. It’s easy, healthy, and tastes amazing!
In a Jar
1 cup almond milk (or dairy substitute of your choice)
1 tablespoons chia seeds
1 tablespoon flax seed
1 tablespoon nut butter of choice
1 cup of your favorite berries
Add your almond milk, chia seeds + flax seeds into your jar. Shake vigorously and let sit for about 5 minutes. After 5 minutes has passed, shake again and put your jar into the fridge. It should be good to go in about an hour - however, I meal prep mine at the start of each week so they sit in the fridge overnight for a few days. When you’re ready to eat - top with your nut butter and berries and enjoy!
